Pelez-les et hachez-les tr\u00e8s finement. <strong>Dans une petite casserole<\/strong>, m\u00e9langez les \u00e9chalotes, le vinaigre, le vin et l\u2019eau. Portez lentement \u00e0 \u00e9bullition <strong>puis<\/strong> laisser r\u00e9duire sur petit feu, jusqu\u2019\u00e0 \u00e9vaporation quasi totale. <strong>D\u00e9barrassez et r\u00e9servez.<\/strong><\/p><p><strong>2\/ Pr\u00e9parez le beurre blanc\u00a0:<\/strong> Versez la cr\u00e8me dans <strong>la m\u00eame casserole<\/strong>, puis faites-la r\u00e9duire de moiti\u00e9. Ajoutez progressivement les 2\/3 du <strong>beurre<\/strong> coup\u00e9 en cubes, tout en fouettant. Sans cesser de fouetter, ajoutez la moiti\u00e9 de la r\u00e9ductio<strong>n d\u2019\u00e9chalotes, puis le reste du beurre<\/strong> et le reste des <strong>\u00e9chalotes<\/strong>. Salez et poivrez. Terminez en fouettant une derni\u00e8re fois pour bien \u00e9mulsionner. <strong>R\u00e9servez au chaud.<\/strong><\/p><p><strong>3\/ Pr\u00e9parez un court-bouillon pour pocher le poisson\u00a0:<\/strong> Faites fr\u00e9mir pendant <strong>30 minutes<\/strong> une grande casserole remplie d\u2019eau (3 ou 4\u00a0l) avec le vin blanc, du sel, du poivre en grains, les l\u00e9gumes et les herbes. Lorsque les ingr\u00e9dients ont infus\u00e9, <strong>plongez-y le poisson<\/strong> (entier ou en tron\u00e7ons) et pochez-le quelques minutes. \u00c9gouttez et servez aussit\u00f4t<strong> le poisson napp\u00e9 de beurre Laissez-la reposer au frais dans du film alimentaire pendant 1 h.<\/p><p><strong>2\/<\/strong> <strong>Pr\u00e9chauffez le four \u00e0 180\u00b0C<\/strong>. Pelez les pommes, coupez-les en 4 et \u00e9p\u00e9pinez-les.<\/p><p><strong>3\/<\/strong> Mettez <strong>le sucre<\/strong>,<strong> l&#8217;eau<\/strong> et le <strong>jus de citron<\/strong> dans un moule \u00e0 manqu\u00e9 ou une po\u00eale en fonte allant au four. Faites cuire sur feu moyen pendant 5 \u00e0 8 min pour obtenir <strong>un caramel l\u00e9ger<\/strong>. Ajoutez <strong>le beurre<\/strong>.<\/p><p><strong>4\/<\/strong> Rangez <strong>les pommes<\/strong> dans le moule, couvrez d\u2019un papier aluminium en laissant une petite ouverture et <strong>faites confire<\/strong> 30 \u00e0 50 min au four, selon la vari\u00e9t\u00e9 de pommes.<\/p><p><strong>5\/<\/strong> Poursuivez la cuisson \u00e0 d\u00e9couvert pendant 10 mn pour bien faire<strong> caram\u00e9liser les pommes<\/strong>. Laissez refroidir 30 minutes.<\/p><p><strong>6\/ Abaissez<\/strong> <strong>la p\u00e2te<\/strong> sur une \u00e9paisseur de 5 mm environ et recouvrez <strong>les pommes<\/strong> en rentrant la p\u00e2te \u00e0 l&#8217;int\u00e9rieur du moule. Faites cuire 20 \u00e0 30 min jusqu&#8217;\u00e0 ce que la p\u00e2te soit dor\u00e9e et que le <strong>caramel<\/strong> remonte sur les c\u00f4t\u00e9s du moule.<\/p><p><strong>7\/<\/strong> <strong>Laissez ti\u00e9dir<\/strong> 10 min puis retournez.
